It’s been a wonderfully busy weekend of volunteering for me, with a few other notable happenings!

I can honestly say that volunteering is one of my favorite and most rewarding things to do. I am willing to bet that many HarvestHERs  do many hours of volunteering. In my case, it’s because in so many little ways over all the years of being on the harvest and traveling with family and crew, we have been on the grateful side of people in all walks of life helping us.
Without a doubt, it is through our faith that many of our blessings come.

In the winter months when home, I volunteer at our parish. We have, for quite a few years now, held a soup and bread meal following the stations of the cross on Fridays during Lent. Different lay ministries host each week.  On Friday, I made tomato soup. I must admit, as the kids were growing up, I opened a lot of Campbell’s  soup cans, but this made-from-scratch recipe is from a lady I used to work with and is a wonderful friend of my mothers. Kiddo was cooking when I was a waitress at our local restaurant. There was never a dull moment with Kiddo…she is truly one of a kind! I  learned a lot from her and had a blast working with her. I asked her for the recipe (and a few others that I will share along the journey) and if I could post it. She said to go ahead and do whatever I like .😉

I have made it twice now in four days so it works and can be done in any size you want. On Friday, I started with a gallon of tomatoes, I chopped them up a little and warmed juice and all in a pot. Then I added 1/2 teaspoon of baking soda and stirred (the soda is to take the acidity out of the tomatoes). To that, I added four cups of chicken broth, one chopped onion, several stalks of celery (browned in butter), one teaspoon of Lawry’s seasoning and some parsley flakes. When all combined, I added about a quart and half of cream (all I had left). So, that’s it…a big, beautiful pot of soup that didn’t come home from church!

Now, I started my morning on Friday (before the soup) making Cinnamon Twists for Sunday and another function at the church I volunteered for. Like I said, it was a busy weekend.

Saturday morning, I was back at church with a group of wonderful ladies setting up Saint Joseph tables for our Patron Saint’s Feast Day. We set up two tables and accepted volunteered baked items to share after all four weekend masses.Everything simply came together because of the many generous families in our parish.

What a beautiful two days of sharing and learning about our Patron Saint. All the food that was made and didn’t get consumed was donated to our local soup kitchens and domestic violence center. Any free-will offerings were donated to our parish for the Pine Room renovation. So you see, the giving just kept on giving…a beautiful weekend.

I finished off Sunday with our Lenten weekly faith-based movie, “Grace Card”. Another great movie to check out and I highly recommend it!
