This picture pretty well sums up the weather today.

While it continues to rain, I’ve tried to keep myself busy here in our little hut. This morning I reconciled the month of May and got paychecks in the mail. After a conversation with Nancy Eberts yesterday, I decided today was the perfect day to make breakfast burritos & freeze them.

I tried something new (for me) and put hash browns in the mix. The hubs approved! Also, when frying up the sausage, I always save the grease and put it in an old jelly jar or mason jar and stick it in the fridge. That way I can put together gravy for biscuits and gravy pretty quickly.13346721_139385336477708_3684110773940937384_n

My breakfast burritos turned out pretty well & were super easy to make!

Tomorrow I may make some cookies to stick in the freezer for last minute desserts (or when the hubs is hungry). Still praying for the rain to subside for a while…I’m quickly running out of things to do! Rain days are getting so hard to deal with!
