It was so nice to be able to get outside & spend some time in the sun!

Woke up to a beautiful morning! The sun was shining through the clouds & I took advantage of it by taking a little bike ride. Came back to the camper & made some Chocolate Chip Pecan cookies to put in the freezer. To make things easier & quicker, I make up a few bags of flour/salt/baking soda mix to put in the freezer. That way when I’m in a hurry I can just dump the bag in with the sugar, shortening & eggs. I wish I could say I had some secret & amazing recipe that I use…but I don’t. I just always use the recipe that’s on the bag of Nestle Tollhouse chocolate chips!

We had company this afternoon, so I threw together a quick dip. It only has three ingredients, so it’s easy to keep them all on hand – just in case. I learned to make this dip years ago from a good friend of mine & it has come in handy on countless occasions.

1 can Hormel Chili
1 brick of cream cheese
Shredded Cheese
Tortilla chips for serving

In a glass pie plate spread 1 brick of cream cheese (microwave until spreadable if frozen). Spread 1 can of Hormel Chili and top with a handful of shredded cheese. Microwave until the cheese is melted. Serve with tortilla chips.

Even though it rained a bit today, we had some sun – which is a huge improvement! ☀️ That’s one day closer to drying out and getting back in the field! 🙏🏻
