The wheels keep on rolling! It may be slow at times due to mud, but we’re still going! I took dinner to the guys and rode along for a bit tonight. Even with all the mud, the guys were still happy to be running 😄

It’s easy to say that the tow rope is the most valuable tool we have right now!

Ingredients

  • 2-3lbs Stew meat or cut up steak
  • 2 cans cream of mushroom soup
  • 1 packet of Lipton Onion Soup Mix
  • 2 cans mushrooms (optional)
  • 1 medium onion - diced
  • 2 cups beef broth (I use beef base, but bouillon cubes would work too)
  • Salt
  • Pepper
  • Worcestershire sauce
  • Garlic powder

Instructions

  1. Spray a 9x13 pan with Pam. Spread meat out over the bottom of the pan. Season to taste with salt, pepper & garlic powder. Put on a few dashes of Worcestershire sauce. Cover meat with mushrooms and onions.
  2. In a bowl mix together soup, soup mix and beef broth. Pour over meat and make sure the meat is completely covered.
  3. Cover with foil and bake at 300 for 3 hours. Feeds 6 to 8 guys.
  4. Serve over rice, egg noodles or mashed potatoes.
