It’s another late night in Texas to get finished up. Good hot weather is keeping everyone busy! Our crew in Kansas have got a couple days of cutting in and missed the rains so far. Hoping to all be together again in the next day or two.

Most of my days lately have been spent in the field jumping from grain cart to combine to shuffling trucks field to field. It’s been a struggle to have much of a conversation with Chris lately as his phone doesn’t seem to quit ringing for long but that’s business!

I am SO SO thankful for my girls being such awesome helpers! While I’ve been in the field, Amber has been doing the meals. Today I left early to get settled up with a farmer and get to the field with the guys. Taylor and Billy had a lunch date with friends in town. Amber brought us lunch and switched with me so I could get back to town to get settled up on some more things before we leave town. Amber had already put supper in crock pots and Taylor had made dessert. Grabbed our food and back to the field we went.

Amber and I had to make a fuel run so we could keep machines rolling a little longer tonight. Love it that even when we are running on very little sleep, covered with sweat, dirt and bug spray we still can make each other laugh! Makes the long days more enjoyable when you have a fun family and crew to work with!

Shipwreck Casserole

Ingredients

  • 5-6 potatoes, cubed
  • 1/4 cup chopped onions
  • 1 lb hamburger
  • 2 - 15oz cans pork and beans
  • 1 - 10oz can tomato soup
  • 6-12 strips bacon, cut up
  • 2 cups shredded cheese

Instructions

  1. Preheat oven to 350
  2. Brown hamburger
  3. Layer ingredients in order as listed above, except cheese
  4. Bake for 1 hour, covered or until potatoes are done
  5. Top with cheese. Bake until cheese is melted.
