Zucchini Cake

Ingredients

    In a separate bowl, mix together:
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp salt.
  • In a large bowl, blend together:
  • 2 cups sugar
  • 1 cup oil.
  • Add:
  • 3 eggs
  • 2 cups raw grated zucchini
  • 3 tsp. Cinnamon
  • 3 tsp. vanilla.

Instructions

  1. You will then add the flour mixture to the liquid mixture. Blend until well mixed.
  2. Bake at 350 degrees. If you are using a jelly roll pan, which is what we normally use, it takes about 20 to 25 minutes. If using a regular cake pan, it might take 30 minutes. Be sure to test with a toothpick inserted in center of cake to verify if done.
  3. Enjoy plain or add the following glaze:
  4. 1 cup sugar
  5. 6 Tablespoons margarine or oleo
  6. 1/2 cup evaporated skim milk or use cream
  7. 1 tsp. vanilla
  8. Mix and boil 2 minutes. Pour over cake.
  9. If you prefer a cream cheese frosting, just use your favorite one! I normally just throw the cream cheese (softened) and powdered sugar together, with a little vanilla, until it tastes the way we like.
