Stuffed Pepper Casserole

Ingredients

  • 3 bell peppers, chunked & boiled until softened slightly
  • 1 1/2 lbs ground beef, browned
  • 1-2 cups of cooked rice
  • 1 cup frozen corn
  • 1 jar spaghetti sauce
  • 1 can black beans, drained & rinsed
  • 1 can diced tomatoes
  • 1 can green chilies
  • 1 can sliced mushrooms
  • Mozzarella cheese

Instructions

  1. Mix everything together (except cheese) & bake for 30 minutes at 350 degrees.
  2. Top with cheese.
