Breakfast Egg Muffins

After reading several “muffin breakfast ideas” and googling recipes, I simply came up with my own (mostly due to what I had in the house/fridge).

I believe they will be an easy and quick “microwave/heat and eat” kind of breakfast.

Ingredients

  • Tater Tots
  • Eggs
  • Sausage and/or bacon
  • Milk
  • Shredded cheese
  • Seasoning

Instructions

  1. I pulled out the GIANT muffin tin and, after spraying with Pam, I squashed some Tater Tots in the bottom of each section.
  2. I then layered some fried sausage in each.
  3. I combined beaten eggs with some milk, shredded cheese and seasonings. I poured a little over 1/2 cup into each muffin section. They were filled to the brim.
  4. Baked for 30 minutes at 350°.
  5. I enjoyed one for my supper.
  6. I believe they will be an easy and quick "microwave/heat and eat" kind of breakfast.
