Ingredients

  • Red potatoes
  • Seasoning Salt (or package of Lipton's Onion Soup Mix)
  • Olive Oil

Instructions

  1. Clean, quarter and cut up Red Potatoes (I do good bite-sized pieces) into a microwave safe dish.
  2. Sprinkle with seasoning salt (sometimes I use a package of dry Lipton Onion Soup Mix).
  3. Drizzle olive oil over all.
  4. Microwave on high in 4 minute intervals. Let rest in between...generally takes four times. Stir once.
  5. Serve. These are always a go-to when in a hurry and everyone likes them!

Ingredients

  • 6 baking potatoes
  • 1 pkg ranch powder mix or more to taste
  • milk
  • sour cream (about 1/2 cup or more to make creamy)
  • butter
  • shredded cheddar cheese
  • bacon bits
  • green onion (optional)

Instructions

  1. Bake potatoes until tender.
  2. Cut in half and scoop out insides.
  3. Mash the potato insides & mix in the ranch, milk, sour cream & some butter.
  4. Scoop back into the potato skins and sprinkle with cheddar cheese & bacon bits.
  5. Bake at 350° until warmed through and cheese is melted.
  6. Top with green onion before serving or on the side.

Ingredients

  • Potatoes
  • butter
  • parmesan cheese
  • garlic salt

Instructions

  1. I saw the potatoes just recently on Facebook and, of course, thought I could remember it but, nonetheless, tried it?
  2. I melted 1/2 cup butter in a 9x13 brownie pan.
  3. Spread lots of parmesan cheese and a little garlic salt over the butter.
  4. Scrubbed, then cut 4 baking potatoes in half and lay cut side in butter.
  5. I baked 40 minutes at 350°.
  6. I thought they were fantastic and a plus is they ship well to the field. And could be considered a utensil-free food!

Ingredients

  • 6-8 med potatoes
  • Sauce:
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1/2 cup crumbled bacon
  • 1 cup grated cheddar cheese
  • Mix together
  • Topping:
  • 2 cups crushed cornflakes cereal
  • 1/4 cup melted butter
  • Mix together

Instructions

  1. Cook potatoes in 1 inch pieces until tender.
  2. Mix cooked potatoes with sauce in a large bowl.
  3. Dump mixture into 9x13 pan and cover with cornflake topping.
  4. Bake at 350 degrees for 45 minutes.
  5. I do this in my large electric roaster, just x4 the recipe.
