I’m Lindsey Orgain from Orgain Farms & Harvesting in Cheyenne, OK. I’m relatively new to the harvest trail, but this is our 11th season to be in business. Jason & I married in May 2012, but it wasn’t until the 2014 season that I quit my day job & came aboard full time…with a 6 month old baby boy! I can tell you what “overwhelmed” feels like 🙂

We’re a small, family-owned operation. We start cutting wheat in Oklahoma and run up to Montana. We have to get home to get our own crops planted and then start a lengthy fall run in North Central Oklahoma. We also run about 200 mama cows.

I grew up in Clinton, OK. My folks owned an auto parts store on 183 Hwy (my mom was a school librarian) and I remember watching those huge combines headed South every summer. I attended college at Oklahoma State and went to work in banking and investments for almost 9 years.

I spend my days keeping everyone fed, helping move from field to field, running errands & chasing around a 2 1/2 year old. In the fall I usually run the grain cart.

I never imagined that this would be my life, but I truly love it. There are lots of difficult times, but there are also lots of great times. At the end of the day, my little family is together and that’s really what it’s all about!

I made this recipe on a whim last year because I happened to have all the ingredients (I add a can of corn) on hand. I’ll admit, I wasn’t really “feelin’ it,” but I was in a bind & needed something quick. Naturally, it was hit & has been made several times since.
