Nancy Eberts – Eberts Harvesting Inc.

Good afternoon, HarvestHERs!

It’s been a little while since I have posted.

We are basically in the “lull” between summer and fall harvest. Myron and I, along with our son and his family, farm as well.  Therefore, this “lull” gets filled up with our harvest, hay, silage and cattle.

We are dry and even though we had a couple of rains in the last two weeks, there are still cracks so deep in the ground (in the fields) that we’re gonna need more!

There have been years when we had little, if any, time between our north harvest (Kenmare) and fall harvest (Valley City) but this year we had a little time.

The crew is still all here. They are enjoying the shorter days and eating at my house…so even though cooking has been more accommodating with a larger fridge and stove, not to mention way more counter space, I now get three meals a day in as opposed to two, since they aren’t packing a lunch.

I am also using my own washer and dryer which again is BIGGER!

I am enjoying the cool, crisp air with windows open at night and the beautiful colors of the leaves.

I worked on the men’s camper both yesterday and today and now I need to start packing mine.

Speaking of windows, there is no easier way to keep them clean than with Norwex rags…done in a jiffy! I highly recommend them!

How many of you pack and re-pack campers three times a year?
It’s amazing how, after all these years harvesting, I still don’t have separate kitchen, living and bath items in campers and house.

Maybe someday…

We are within a week of getting back to the harvest hours and work mode. I look forward to keeping up with posts and pictures.

We started today with French toast and bacon! I call it Redneck French toast because when you have 8 mouths to feed, you tend to have a lot of bread or not enough.

When your bread is starting to get old you make French toast! I simply use 6 eggs to 2 cups of milk and add a little sugar and cinnamon.

Fry on electric skillet using a little butter and a little butter Crisco (More butter, more better – right?!) It’s regular bread and I don’t sprinkle powdered sugar on it…hence the name Redneck!

A real treat these last couple of days has been Bobby’s Apple Cake! (will share in separate post)

When visiting my friend and being treated to a piece, I simply had to try it. Turned out that it is a hit!
The cake is super simple but what makes it “top-notch” is pouring the warm icing over it and serving! I’ve made it twice and it’s gone in an instant!
